Wheat in Armenian dishes: groats, bulgur, achar and arishta
Several names on HOVK’s menu point to different uses of wheat. Groats and bulgur appear in soups, achar is offered as a pilaf, and arishta is Armenian noodles. They provide different ways to choose a dish, even when an accompanying ingredient is the same.
Red bean soup lists wheat groats, not barley. Aveluk soup lists bulgur. Mushroom achar pilaf and mushroom arishta let you compare a grain dish with noodles while keeping mushrooms as a familiar element.
That can be an approachable way to try something new: keep an ingredient you enjoy and change its partner. If you avoid wheat or gluten, check the complete dish with the team rather than relying on its translated name.
