Spas with ishli kufta: yogurt soup with a filled dumpling
Spas is Armenian yogurt soup. At HOVK, one version adds ishli kufta, a dumpling with a meat filling. The contrast between the soup, the outer shell and the filling makes this a different choice from classic spas.
Order regular spas when you want to focus on the yogurt and herbs. Choose the ishli version when the filled dumpling is part of what you want to try. The pale yogurt base should not be read as a sign that the complete dish is vegetarian.
