Spas is one of the most familiar soups in Armenian cuisine. Its gently tangy dairy base, grain and fresh herbs create a dish that can feel light or comforting depending on how it is served.
What is Armenian spas?
The base of spas is usually matsun or tan, combined with a grain such as wheat or rice. Many recipes also use egg and a small amount of flour to help create an even texture. Onion, coriander, mint or other herbs may be added according to the family recipe and the season.
There is no single version used in every Armenian kitchen. The choice of grain, herbs and consistency can vary, while the recognizable character of the soup remains: a mild acidity, a smooth texture and a clean herbal aroma.
Why preparation matters
The dairy mixture needs gentle heat and steady stirring. This helps the soup stay smooth rather than separate. The grain is prepared until tender, and the herbs are generally added near the end so their aroma remains clear.
Spas is often served warm, especially in cooler weather. Some families also enjoy a cooler version during summer. These different serving traditions make it a dish that appears on Armenian tables throughout the year.
Spas with ishli kufta
A more substantial interpretation combines spas with ishli kufta. The warm soup and filled kufta create a richer course while keeping the characteristic tang of the dairy base.
